Guest pays cash
I received a guest request for cash payment on arrival. How is the invoicing process and how does booking.com get their fee?
My understanding: 1. guest pays amount cash (exact amount as indicated in the booking.com system) 2. guest receives invoice from me 3. booking.com will withhold their fee from another guest booking.

So no that not really it at all.
By default, guest does pay you, however while that does default to direct pay you and on arrival.
That is not a limitation , i.e. you can define all payment methods and time limits you accept in fine print, and into the Auto Message Template for New Reservations.
Invoices are optional , unless the guest actually requests one, plenty of online services free like tradeshift.com to do this. or get a free spreadsheet template for your ms office , open office program to do it.
BdC will invoice you, copy will be on Extranet > Finance , Docs & Invoices.
If you sign up for the direct debit on bank, it will be auto collected ( Finance > overview page)
If you do not sign up for DD, and BdC are not collecting the payment from guest, then you must use the BdC Bank info to send the commission to that account
Typically that would be form your own bank, or in some case where that is not feasible, you would use a money transfer service.
