Typically this is done by leveraging several features from:
using the calendar list view, find the date range, and manually set it under restrictions for that Room Type.
This would be manual each time there is a booking.
You must request all Extended fields in the calendar list view to be enabled.

Its likely very possible with the right 3rd party channel manager, which has automation rule creation features.
I just dont know of one specifically with it of the top of my head
