so generally 2 ways

use the open/close rooms under availability menu
property snooze up to a date and disable new bookings on or off
1. https://admin.booking.com/hotel/hoteladmin/extranet_ng/manage/general_i…
2. click snooze your listing
3. follow the steps shown
