We used to see the credit cards cvc before, but now they are not visible. How can we charge through mail order to those who have cancelled non-refundable bookings now?

You can only do it on day after check in date.
How were they cancelled?
I suspect the bookings have not actually got a cancellation status.
And you just mean you got a phone call or message?
If cancelled by BdC on behalf of guest there is no further action, you can't get blood out of a stone
