Booking only 2020 not 2021

I do not want to take reservations YET, in 2021 How would I that in Bookings?

In September 2020 I will open for reservations in 2021.

Just 'Close' the rooms until you are ready to open up. You can do a Bulk update in Rates and Reservations, Calendar.
