Under Rates and Availability, Calendar, make sure calendar is in List view not Month (over on right hand side). Then open up down left. There should be a Minimum stay line. If you don't see it contact the booking.com help team using Inbox icon on Extranet and ask them to give you access. You can do a bulk edit.

Simply check calendar in list view, on left there are extra rows under each rate plan when you expand view.
If minimum days is not there you need to message support team yo have all hidden extended fields added.
Extranet, inbox, booking messages, click see contact options.
