2 customers have had emails requesting payment or their booking will be cancelled. another has had their booking cancelled. None of these customers requested this.

So regarding your issue it could well be a phishing attempt and your mail account has been compromised - have you seen the emails? You will need to validate the integrity of the emails being sent out and from which IP address or mailbox.
Also a booking cannot be cancelled automatically just like that and it requires intervention by you or the guest.
