Despite my calendar showing no availability for a period booking .com have taken a booking and I am now double booked and it is impossible to contact them. What do I do?

If you failed to setup a Channel Manager when listing on 2 or more OTA, this will never reliably work.

you can always use the reservation details page, scrool to bottom and message the guest , if you failed to enable the property > policies : mandatory address & phone number.
