Thanks for reaching out. 

If you have set up a rate plan that has a meal included eg. bed& breakfast rate, then the option to remove serving meals will be greyed out. You will need to remove the rate plan that has a meal included or remove the meal option from the rate plan to be able to change this to no.

You can set up taxes in the extranet under Property > Vat/Tax/Charges.

Thanks for reaching out. Please see this link on how to set a minimum length of stay.

If you need additional help you can contact the team via the extranet as well. You can compose a message via the extranet under Inbox > Booking.com messages. If there is no "compose new message" directly there then click on See Contact Options > select a relevant topic eg. Account > select a relevant subtopic eg. Other > then click see all contact options > Message > write your message.
