Appreciate the help but unfortunately this still doesn't work. The problem seems to be that in order to show the week as free you have to show all of the dates after the Saturday as free too. If you don't the week doesn't show as bookable and if you do you are back to the same problem that customers can book from any start date.
What we need is 3 things -
1). The ability to mark a Saturday as a 7 day minimum booking (which you can do) but then
2.) STOPPING customers starting a booking on any other day in the week and
3.) ALSO showing that week as bookable on the Booking.com system. You can set a restriction on the Saturday - you can also close the other days of the week off - but then the week shows as booked on the customer side.
Once done this site would be really useful.
