I think you have to call the number listed for your country and then ask to speak to a manager about a missing payment. They then call you back either from Spain or Hong Kong. Emails and messages just don’t seem to get actioned.
Phone call. I just insisted to speak to a manager about a missing payment as only managers can take action. I called to a UK number and they phoned me back fro Spain and once from Hong Kong.
I called the booking.com number listed for my country which is the UK. They then phoned me back (for security) and that was a Spanish number. I insisted on speaking to a manager as they are the people that can make things happen.

My payment from the 7/8th January has still not been received, even though I've had a payment for a check in the week later. This suggests, as does all the messages on this thread, that the error lies with booking.com. I've called and Sent many messages but without any resolution. I can't even get the payment transaction number so I can get my bank involved. This is such poor service from a company that depend on us for their own business success.
UPDATE: after speaking to a very efficient manager on Friday 27th Jan, I received my payment on 28th Jan. Hang in there guys, they seem to pay eventually!
