So regarding your overbooking issue you are not going to find the answer here and you need to contact BDC support via the entranet/inbox or the dedicated contact number for partner support.
The calendar sync works well and clearly you did something wrong - make sure you set it up and both ends of airbnb and booking.com.
It is not a great situation for you and the guests and the sooner you resolve it the better.

So regarding your issue if you use the deskop version of the extranet you can go to property > property layout > type if you want to change the type - see screenshot.

As regards payment if booking.com handle your bookings you will be paid by the 16th of the following month.

As regards your issue I guess you have every right to refuse the booking and you can decide whether to refund the money depending on your policies! However you might want to contact BDC support directly for some further guidance.
