What you can do here is to ask BDC to provide you with a charge-back defense document.
I see that they've removed these from the Reservations tab, however these do exist and you can ask for it.
Provide that to the bank and they will revert the claim from the guest.

1. When is the check-in date?
2. How are you charging the card?
Your answers to those will shed light on what's going on.

This is the same everywhere in the world.
Let me put it right for you:
1. BDC looks at partners as companies running a business
2. Each company has to have their IBAN linked to their headquarters location or to their incorporation location
3. You cannot have a foreign IBAN linked to your business activity, that's called money laundering
I hope you understand now, why it's like that.

Dear Stephen,
So let me get this right:
1. You charge a deposit, with Stripe
2. Guest has to pay the 2.5% on the deposit, when they pay it
3. You want to refund the deposit, however the 2.5% paid by them is the question here
If so, then you should only refund the deposit, not the 2.5%. However if the 2.5% fee is included in the deposit price, you'll lose the 2.5% fee.
It's that simple.

Dear Sean,
Having in mind that you have a wedding and conference center, I suggest you look at a software that can serve those functions as well.
It would be beneficial for you to get an all-in-one package system, not jut the PMS.
You will need to have a Channel Manager too.
